Baked Taquitos

No-Knead Dinner Rolls

2 cups milk
1/2 cup sugar
1/2 cup vegetable oil
4 1/2 cups flour
2 1/4 teaspoon yeast
1/2 heaping teaspoon baking powder
1/2 scant teaspoon baking soda
1 tablespoon salt
 Over medium-low heat, scald milk, sugar, and oil, stirring occasionally. Before the mix boils, turn off heat. Allow to cool between 90 and 110 degrees. Add 2 cups flour and the yeast. Stir till incorporated. Add another 2 cups of flour. Stir and allow to sit, covered for one hour. After size has doubled, and 1/2 cup of flour, baking powder, baking soda, and salt. Stir until combined. Butter 1 or 2 muffin pans. Form rolls (use flour on hands, dough is very sticky.) and place in pans. Cover and allow to rise for 1-2 hours. Bake until golden brown, 17-20 minutes.(I put mine in for only 15 and they were too brown so watch them closely.)

Cinnamon Rolls

2 cups whole milk
1/2 cup vegetable oil
1/2 cup sugar
1 tablespoon active dry yeast
4 1/2 cups flour 
1/2 heaping teaspoon baking powder
1/2 scant teaspoon baking soda
1/2 tablespoon salt
 Scald milk, vegetable oil, and sugar to 150 degrees. Let cool until lukewarm. Sprinkle in yeast and let sit for a few minutes. Add 4 cups of flour and stir together. Cover and let sit for one hour. Add 1/2 cup flour, baking powder, baking soda, and salt. Stir together. Sprinkle surface generously with flour and roll out dough into a rectangle shape.

Filling:
1/4 to 1/2 cup melted butter
3/4 cup sugar (I used brown sugar)
1/2 cup cinnamon
 Drizzle melted butter over dough and sprinkle on sugar and cinnamon. Fold dough in half. Cut 1" strips and form strips into rolls. Place rolls in a greased pan, cover and let rise 30 - 60 minutes.(The longer you let rise the bigger they will be) Bake until golden brown 15-18 minutes at 375 degrees.(Again I had to watch them closely so they wouldn't burn, I had mine in for about 8 minutes.)

Icing:
1/2 bag powdered sugar
1/4 cup milk
1 teaspoon vanilla
2 tablespoons melted butter
1 pinch salt
Mix all ingredients together and frost over rolls once you pull them out of the oven.  


Honey Oat Bread 
 









2/3 c. water
2 tsp. vegetable oil
3 tbs. honey
3/4 tsp. salt
3/4 c. oatmeal
1 1/4 c. bread flour
1 1/2 tsp. bread maker yeast
(This will make a medium sized loaf. Make sure to set bread maker to light crust setting or the crust will be too crunchy)
